Brush thoroughly the chicken breasts with the oil – use all the given oil, sprinkle with salt and set aside.

Now prepare the breading: in a bowl combine breadcrumbs, finely chopped parsley, mint & thyme or any other fresh herbs you may prefer, the grated lemon rind and pepper, mix well.

Step 2

Turn the meat in the oil again. Pour the breading in a large dish and one by one bread the chicken making sure the breading adheres well on both sides.

Cover an oven dish with parchment paper and lay the chicken over it. Bake in a preheated oven at 375° for about 10 to 15 minutes, turning the breasts a couple of times. The meat should result crispy on the outside, soft but cooked in the inside.

Serve hot with steamed broccoli florets.

  • 16 oz. Organic chicken breasts (4 oz. per person)
  • 3 tbsp. Extra virgin olive oil
  • 1 Organic grated lemon rind
  • 2 ¼ cups Bread crumbs (the plain & roughly grated type) (choose gluten free for a gluten free recipe)
  • ¼ cup Fresh Italian parsley (finely chopped)
  • 2 leaves of fresh mint (optional)
  • A pinch of fresh thyme (optional)
  • Himalayan salt & pepper to taste
