Directions
In a small bowl mix 2 tbsp. of oil and lemon juice with the mix of herbs, salt & pepper and mix well. Transfer the sauce to a large dish, turn the chicken breasts in the sauce on both sides several times – making sure they are well coated with the dressing you have just prepared; cover and let sit for 15-20 minutes on the counter.
Step 2
In a large non-stick pan pour 1 tbsp of oil and spread the oil well all over its surface (you can use your hand to do this). Heat up the pan on medium-high heat (not hot because we don’t want to burn the oil), add the chicken breasts and let cook 5-7 min on each side. Serve hot accompanied by a mixed green salad. Garnish with fresh lemon wedges.

- 16 oz. Organic chicken breasts (4 oz. per person)
- 3 tbsp. Extra virgin olive oil
- 1 tbsp. fresh lemon juice (optional)
- 2 tbsp. or less of Mixed dry herbs
- Himalayan salt & pepper to taste
