- 1 ½ cups quinoa
- 1 cup cherry tomatoes cut in halves, seeds removed
- ¼ cup red onion, thinly sliced (optional)
- ½ cup carrot, chopped
- ¼ cup fresh celery, chopped
- ½ cup red & yellow peppers, chopped
- 3 cups vegetable broth, low sodium or water to cook quinoa
- 1 tbsp raw apple cider vinegar or 1 tbsp. Fresh lemon juice
- 3 tbsp. Extra virgin olive oil
- Himalayan salt & pepper to taste
