Directions
Step 1
Pour a tbsp of oil into a skillet. Bring to medium-high heat and add the onion. Saute’ the onion until it becomes translucent. Add the lentils, stir them and let them pan fry for a few minutes on low heat.
In a bowl mix the the lentils with the egg, parmesan cheese, parsley, salt, pepper, ginger, coriander and bread crumbs. If you are using pre-packaged steamed lentils you may not need to add any salt.
Step 2
Make a few burgers with this mixture. Add a drizzle of oil to a non-stick skillet, bring to medium heat and cook the burgers until they appear golden or bake them at 400º for about 20 minutes.
Ingredients for four
- 1 ½ cup green lentils, cooked and drained, you can also use steamed lentils
- 1 egg
- 2 tbsp parmesan cheese (skip for a dairy free recipe)
- a sprinkle of fresh Italian parsley, minced
- 1 small red onion, diced (optional)
- 1 tbsp bread crumbs (may use gluten-free) or of oatmeal or use 1 slice of sprouted bread reduced in crumbs by a food processor
- extra virgin olive oil
- ¼ tsp. ground ginger
- ¼ tsp. coriander
- ¼ tsp black pepper
- sea salt to taste
