Directions

Step 1

In a skillet melt the butter on medium heat and add the onion.  When the onion starts to get some color add the carrots, and let them sauté’ for about 10 minutes.  Add the mushrooms, salt and pepper, and stir well.  Add the wine, and let it evaporate.  Cook for about 10 minutes.

Step 2

Add the chicken breasts skillet with the other ingredients.  Mix well so the chicken gets the flavor from all the other ingredients.  Add the parsley.  Let cook for about 5 minutes.  Serve warm.

Ingredients for four

  • 1 lb. chicken breast
  • ¾ cup fresh mushrooms, washed, sliced
  • ½ cup carrots, washed, cut in rounds (optional)
  • 1 red onion, thinly sliced
  • ¾ cup white wine
  • a handful of flat leaf Italian parsley, finely chopped
  • 1 ½ tbsp. butter
  • sea salt & black pepper to taste
