Directions

Step 1

Beat the eggs until they become creamy.  Add the oil and now stir gently until everything is completely emulsified.

Step 2

Add the lemon juice and salt.  Refrigerate immediately.

Ingredients

  • 2 yolks, organic, very fresh (use 3 if they are very small)
  • juice of half a lemon
  • ½ cup or less of light olive oil
  • sea salt to taste
