Directions
Step 1
Rinse potatoes and boil them until tender but not overdone-about 20m. Let cool and peel them. Cut them in big thick chunks. Rinse green beans well. Trim ends and cut in half. Steam them until tender. Let cool.
Step 2
Put both potatoes and beans in a large shallow bowl. Sprinkle w/parsley, extra virgin olive oil, salt and pepper and gently mix.

- 1 lb. Sweet potatoes (medium size)
- 1 lb. Green beans
- 1 tbsp. Extra virgin olive oil
- 2 tbsp. Italian parsley chopped
- Sea salt & pepper to taste
