Directions
Step 1
Pour olive oil in a large saucepan -bring to medium heat- add the onion and garlic and let them flavor the oil for about 2 minutes. Add the tomatoes, stir fast. Let cook for about 3 minutes on medium-low heat. Now add the chickpeas, spinach, paprika, and oregano. Add water to slightly cover the ingredients, remember the frozen spinach will release their own water.
Step 2
Cover and bring to boil. Once boiling, reduce the heat to low and simmer for about 20 minutes, stirring occasionally. Add salt and pepper.
Ingredients for four
- 1 medium red or white onion, chopped
- 3 cloves garlic, whole
- 2 tbsp extra virgin olive oil
- 3 cups cooked chickpeas
- 1 10-ounce package of frozen spinach, whole leaf or chopped
- 1 cup peeled plum tomatoes, chopped
- ½ teaspoon paprika, use more for a stronger flavor
- ½ teaspoon dried oregano, use more for a stronger flavor
- Sea salt and black pepper to taste
