Directions
Step 1
Wash the carrots and boil them for about 10 minutes in a pot full of salted water. They are cooked when you can easily split them with a fork. Drain and set aside the cool. Now peel them and cut them in small rounds. If you prefer a carrot with more crunch to it you may want to steam them instead of boiling them.
Step 2
Add to a salad bowl the carrots, olive oil, minced garlic, mint and parsley and if you want also balsamic vinegar, apple cider vinegar or lemon juice and black pepper. Serve at room temperature or cold.
Ingredients for four
- carrots, 1 lbs
- extra virgin olive oil, 1 ½ tbsp
- garlic, minced, as desired (about 3 cloves) or whole for a much milder taste
- parsley, chopped, as desired
- lemon or lime juice, optional
- few leaves of fresh mint
- sea salt and black pepper to taste
