Directions

Step 1

Preheat oven to 375 °.  Add to a large bowl the squash, garlic, rosemary, olive oil, salt and pepper.  Mix well so the oil and the spices thoroughly cover the squash slices.  Now lay the squash slices on a cookie sheet covered with parchment paper.

Step 2

Bake the squash for about 20-30 minutes, until it appears golden.  If it tends to dry add a little water.

Ingredients for four

  • 1 lbs. squash, cleaned & cut in ½ inch slices (any type of squash)
  • 1 garlic clove, finely minced or whole for a milder taste
  • ½ tsp. of dry rosemary or a sprig of fresh rosemary
  • 1 tbsp. extra virgin olive oil
  • sea salt & black pepper to taste
