Step 1

In a bowl mix the rucola or lettuce leaves with all the other ingredients.  Gently toss them. Sprinkle with Parmesan Cheese if desired. Serve cold or at room temperature.

Ingredients for four

  • 2 cups of Rucola Salad or any other lettuce your prefer
  • 1 small Avocado, sliced
  • 2 large Oranges, peeled & sliced
  • ½ red onion, thinly sliced (optional)
  • 1 tbsp. Extra virgin olive oil
  • Sea salt & black pepper to taste
  • A sprinkle of Parmesan Cheese (optional)
