Directions
Step 1
Pour the olive oil in a skillet and heat up to medium heat. Add the onion, salt and pepper. Stir and saute’ for 2 minutes on medium high heat. Lower the heat, and now sauté’ for 5 minutes on low heat covered. Now raise the heat to medium high and add the chicken. Quickly sear the chicken slices turning them over a few times. Add the white wine, and then lower the heat, cover and cook for about 20 minutes. You may need to add more wine during the cooking time.
Step 2
In a bowl place the greens and the celery. Add the chicken, a drizzle of raw olive oil, and if desired a couple of tbsp. of plain Greek yogurt. Mix well and enjoy.
Ingredients for four
- 1 lb. chicken breast, sliced
- 1 or more stalks celery hearts, washed, chopped
- 4 cups greens, washed
- ½ red onion, chopped (you may add raw sliced onion to garnish)
- dry white wine, enough for cooking, approximately ½ cup
- 2 tbsp. extra virgin olive oil
- 2 tbsp. plain Greek yogurt
- sea salt & black pepper to taste
