Directions
Step 1
In a small bowl mix the parsley with the black pepper. Lay the chicken fillets on a dish or cutting board and sprinkle both sides with the parsley mixture. Pat with your hands a few times to allow the spices to stick to the meat. In a skillet heat the olive oil on medium heat, add the garlic let it flavor the oil for a minute. Add the chicken fillets and sear them on both sides for a couple of minutes. You don’t need to cook the chicken thoroughly. Remove the fillets and place them on the bottom of a crockpot.
Step 2
In the same skillet where you seared the chicken, add the broth and lemon juice and bring to boil. Remove from heat and pour this dressing (garlic included) over the chicken in the crockpot. Add the onion at this point and cook on high for 3 hours.

- 1 lb. chicken breast fillets or thighs
- ½ tsp. dry parsley
- ¼ tsp. black pepper
- 2 tbsp. extra virgin olive oil
- 4 garlic cloves
- ½ red onion, thinly sliced
- 1 tbsp. Lemon juice
- ¾ cup of low sodium organic chicken broth
