Directions

Step 1

Preheat oven to 365°.  Wash and peel the eggplant.  Cut it in four parts, lay them on a cookie sheet and bake for 25 minutes or until soft.

Step 2

Place the eggplant and all the other ingredients in a food mixer. Mix well.  Serve.

Ingredients

  • 1 large eggplant
  • 1 garlic clove, skip for a less pungent taste
  • juice of ¼ of a lemon
  • ¼ cup of flat leaf Italian parsley, finely chopped
  • 2 tbsp. extra virgin olive oil
  • sea salt to taste
