In a skillet heat olive oil on medium heat and add minced garlic and chopped parsley, let everything flavor the oil for a minute.

Step 2

Add the halibut and wine and let evaporate for a few minutes. Add lemon juice, cover and finish cooking on medium-low heat. The fish should be ready in a few minutes.  Serve on a bed of rucola.

Ingredients for four

  • 1 lb. Halibut fillets
  • 1 tbsp. Fresh flat Italian parsley, finely chopped
  • 2 tbsp. Extra virgin olive oil
  • 1 Garlic clove, minced
  • 1 tbsp. Lemon juice
  • ½ glass of dry white wine
  • Fresh Rucola
