Directions

Step 1

In a pot heat olive oil on medium heat and add the onion, garlic cloves and basil. Let everything flavor the oil for about 5 minutes on low heat.

Add the lentils (previously rinsed) and stir well. Add water, enough to cover the lentils, increase heat and bring the boil. Reduce heat, add salt and pepper and let cook for 15 minutes on very low heat.

Step 2

At this point add the string beans and continue cooking for another 15 minutes, or until the lentils are tender. Serve warm.

Ingredients for four

  • 1 cup raw green lentils
  • ½ lb. string beans, chopped (you may use frozen)
  • ½ cup white onion, finely chopped (you may use frozen)
  • 4 whole garlic cloves
  • 1 tsp dry basil
  • 3 tbsp. extra virgin olive oil
