Directions
In a non-stick skillet pour the olive oil, bring heat to medium-high and in the meantime add all the spices but the bay leaf. Let the flavor of the spices soak into the oil for a few seconds, then add the raw washed lentils, the strained tomatoes and mix.
Step 2
Transfer everything in a pot or in a crockpot. Add enough water to cover the lentils and make the mixture like a soup. Add the bay leaf. Either bring to boil I the pot and then cook on low heat covered for 45 minutes or cook on high in a crockpot for two hours. Salt and pepper to taste. If the lentils are not cooked inside you may need to add a little bit more water ad let the soup mixture cook a bit longer. It’s up to you how dry or liquid you want the mixture of lentils to be. Garnish with a few leaves of fresh basil.

- 1/2 lb Dried green lentils
- 2 tbsp. Dry onion, minced
- 2 tsp. Garlic powder
- 2 Bay leaves
- 1 tbsp. Coriander
- 1 tsp. Cumin
- 2 cups Strained or diced tomatoes
- 2 tbsp. Extra virgin olive oil
- Sea salt and black pepper to taste & a few leaves of fresh basil to garnish
