Directions

Step 1

Rinse the rice once.  Drain.  Bring to boil a medium size pot filled half way with water. Add the rice and 1 tsp. of salt.  Cook according to the package directions, usually about 30 minutes.  Drain and let cool completely.

Step 2

Preheat oven to 375°.  Transfer the rice in a bowl, add the egg slightly beaten, parmesan cheese, parsley and pepper.  Mix well.  With your hand or helping yourself with a spoon form the balls giving them an oval shape, rinse your hands  often to prevent sticking.  Lay on a baking sheet (use parchment paper to avoid sticking), lightly brush them with oil and bake for about 25 minutes or until golden.

  • 1 ½ cup Arborio Rice
  • 1 egg
  • ¼ cup fresh flat leaf Italian Parsley, finely chopped (optional)
  • 4 tbsp. imported parmesan cheese
  • ¼ cup extra virgin olive oil for brushing
  • sea salt & black pepper to taste
