Directions

Step 1

In a bowl place the chicken, lemon juice, 1 tbsp. oil, salt, pepper and paprika.  Let it marinate for about 1 hour.  In the meantime wash and clean the pepper.  Warm up the chicken broth.

Step 2

In a pot warm up the remainder of the olive oil on medium heat, add the rosemary, the onion, garlic and finally the chicken.  Let all cook on low heat (covered) for about 40 minutes.  Occasionally add the chicken broth so the ingredients won’t stick to the pot.  Save some chicken broth for later.  Once the meat is cooked, remove it from the pot and place it on a dish.  Go back to the pot and add a little broth and the paprika to create a delicious sauce.  Stir.  Serve the sauce over the chicken.

Ingredients for four

  • 1 lb. chicken breast fillets
  • 1 ½ tsp. paprika
  • juice of 1 lemon
  • 1 red onion, chopped
  • 1 garlic clove, whole or minced
  • 2 sprigs, rosemary
  • 2 cups chicken broth
  • 3 tbsp. extra virgin olive oil
  • sea salt & black pepper to taste
