Directions

Step 1 Place parchment paper on a cookie sheet. Place the salmon on a dish and cover it with mustard and sea salt and black pepper. Now put the salmon on the parchment paper.

Step 2 In a non-stick skillet heat the oil on medium-high heat. Add the shallots and let them flavor the oil. When they have become wilted remove them from the skillet and place them on top of the salmon. Pour white wine on the salmon and bake at 425 for 15 minutes.

Step 3 Once the salmon is ready and you are ready to serve it sprinkle the parsley on top of it, and then lay some steamed spinach and serve immediately.

Ingredients for four

  • 4 Shallots, chopped
  • 1 tbsp. Fresh flat Italian Parsley, finely chopped
  • 2 tbsp. Extra virgin olive oil
  • 1/2 glass of dry white wine
  • 3 oz. Salmon filets per person
  • 1 tsp mustard (with seeds)
  • Steamed spinach, a handful
  • Sea salt and black pepper to taste
