Step 1
Wash the string beans.
Step 2
Bring a pot full of water to boil. Add the string beans and salt. Again bring to boil. Let it boil until the beans are tender, about 15 minutes. Use a fork to test if they are done, if they split easily they are ready. Drain. Add olive oil, garlic, and vinegar or lemon juice. Serve chilled or at room temperature.

- 2 lbs. fresh string beans, ends trimmed
- 4 tsp. extra virgin olive oil
- 2 garlic cloves, minced
- 1 tbsp. lemon or lime juice or raw apple cider vinegar
- Sea or pink salt and pepper to taste
