Directions

Step 1

In a skillet heat olive oil on medium heat, add garlic and basil, let everything flavor the oil for a minute.   Add the string beans, stir them well, and let sauté’ on low heat for about 5 minutes.  If you are using frozen string beans let cook for about 15 minutes. When the string beans are ready, remove from heat. Peel the potatoes after you have either boiled, roasted or baked them and cut them in  1-inch cubes.  You can leave the potatoes unpeeled if you prefer.

Step 2

In a bowl add the string beans, potatoes, field greens, walnuts and the avocado.  Mix everything well so that the oil together with the sweet potato and avocado creates a beautiful tasty dressing. Add salt & black pepper to taste.  You may want to add a tbsp. of grated parmesan cheese for extra flavor.

12 lb. string beans, steamed, boiled or frozen

  • 1 tsp. dry basil
  • 1 tbsp. extra virgin olive oil
  • 2 garlic cloves, peeled
  • 2 medium sweet potatoes, boiled, baked or roasted
  • 2 cups field greens
  • 1 avocado, cut in chunks
  • 8 walnuts halves
  • sea salt & black pepper to taste
  • 4 tbsp. imported grated parmesan cheese (optional- omit for a dairy free recipe)
