- Greens & all the raw vegetables that you prefer
- ½ small avocado
- ½ small sweet potato, cubed
- 2 tsp. extra virgin olive oil
Savory bean salad

- Greens & all the raw vegetables that you prefer, here we have used red peppers
- ½ small avocado (optional)
- ½ cup cooked beans, lentils or chickpeas
- 2 tsp. extra virgin olive oil
You can also omit the avocado and have 1 cup of beans.
Sweet potato salad

- Greens & all the raw vegetables that you prefer
- steamed beets
- ½ small avocado
- ½ small sweet potato, cubed
- 2 tsp. extra virgin olive oil
Vegetable quinoa salad

- Greens & all the raw vegetables that you prefer
- ¼ small avocado
- ½ small sweet potato, cubed
- ½ cup cooked quinoa
- 4 oz. chicken breast
- 2 tsp. extra virgin olive oil
Salad with eggs

- Greens & all the raw vegetables that you prefer
- 2 hard-boiled eggs
- ½ small sweet potato, cubed
- 2 tsp. extra virgin olive oil
La caprese salad

- Greens & all the raw vegetables that you prefer
- 5 oz. fresh mozzarella cheese
- ½ cup cooked quinoa
- 2 tsp. extra virgin olive oil
Salad with chicken

- Greens & all the raw vegetables that you prefer
- ½ small avocado
- ½ small sweet potato, cubed
- 4 oz. chicken breast
- 2 tsp. extra virgin olive oil

- You can substitute the ingredients in the salads with similar ingredients, to be sure please check with me when making a substitution
- You don’t have to have all the ingredients in a salad, omit what you don’t like or may not have available.
- On each salad you can add a tbsp. of grated imported parmesan cheese.
